- 3 egg yolks, at room temp
- 1 1/2 tablespoons lemon juice
- 3/4 cup butter or 3/4 cup margarine
- 1 tablespoon hot water
- 1/2 teaspoon salt
- 1 dash cayenne
- 1 teaspoon dry mustard
Directions

1Put egg yolks and lemon juice in a blender.

2Melt butter or margarine and heat until it bubbles, but don't let it brown.

3Add hot water to egg yolks and lemon juice.

4Blend on high and immediately pour in hot butter in a steady stream.

5Add salt, cayenne and mustard.

6Blend about 30 seconds.
