- 2 lb. stewing beef
- 2 medium onions, cut in eighths
- 3 stalks celery, cut in large pieces
- 4 carrots, quartered
- 1 c. tomato juice
- 1/3 c. quick tapioca
- 1 Tbsp. sugar
- 1 Tbsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. basil
- 2 medium potatoes, cut in 1/4-inch slices
Directions

1Combine beef, onions, celery and carrots in 2 1/2-quart casserole.

2Combine tomato juice, tapioca, sugar, salt, pepper and basil.

3Pour over meat and vegetables.

4Cover and bake in a 300° oven for 2 1/2 hours. Add potatoes and cook 1 hour longer. Stir occasionally.
