  • 2 lb. stewing beef
  • 2 medium onions, cut in eighths
  • 3 stalks celery, cut in large pieces
  • 4 carrots, quartered
  • 1 c. tomato juice
  • 1/3 c. quick tapioca
  • 1 Tbsp. sugar
  • 1 Tbsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. basil
  • 2 medium potatoes, cut in 1/4-inch slices

Directions

    Combine beef, onions, celery and carrots in 2 1/2-quart casserole.

    Combine tomato juice, tapioca, sugar, salt, pepper and basil.

    Pour over meat and vegetables.

    Cover and bake in a 300° oven for 2 1/2 hours. Add potatoes and cook 1 hour longer. Stir occasionally.
