- 1 tablespoon olive oil
- 2 tablespoons Dijon mustard
- 4 flour tortillas, 10-inch
- 6 ounces brie cheese, rind removed and at room temperature
- 1 bunch fresh spinach leaves, stems removed
- 12 cup mayonnaise
- 1 garlic clove, minced
- 1 teaspoon lemon juice
Directions

1Spread a thin layer of Dijon mustard on 1 tortilla.

2Spread some Brie on the 2nd tortilla and top with a single layer of fresh spinach leaves.

3Put the 2 tortillas together like a sandwich.

4Heat Olive Oil on medium low in a large frying pan and brown the tortillas on both sides.

5Cut through the tortillas like you would a pizza with a pizza cutter.

6Servie with Aioli dipping sauce.

7For the Aioli dipping sauce: blend all the incredients together with a whisk.
