  • 1 tablespoon olive oil
  • 2 tablespoons Dijon mustard
  • 4 flour tortillas, 10-inch
  • 6 ounces brie cheese, rind removed and at room temperature
  • 1 bunch fresh spinach leaves, stems removed
  • 12 cup mayonnaise
  • 1 garlic clove, minced
  • 1 teaspoon lemon juice

Directions

    Spread a thin layer of Dijon mustard on 1 tortilla.

    Spread some Brie on the 2nd tortilla and top with a single layer of fresh spinach leaves.

    Put the 2 tortillas together like a sandwich.

    Heat Olive Oil on medium low in a large frying pan and brown the tortillas on both sides.

    Cut through the tortillas like you would a pizza with a pizza cutter.

    Servie with Aioli dipping sauce.

    For the Aioli dipping sauce: blend all the incredients together with a whisk.
