  • 2 c. sugar
  • 3 c. sifted all-purpose flour
  • 1 fresh, grated coconut
  • 1 lightly beaten egg
  • 1/2 c. coconut juice
  • 1 fresh, grated coconut
  • 1 tsp. vanilla
  • 2 egg whites
  • 1 c. butter
  • 4 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. vanilla
  • 1/2 c. milk
  • 2 c. sugar
  • 1 c. water
  • pinch of salt

Directions

    Beat 1 cup of butter until creamy.

    Add 2 cups of sugar, 1/2 cup at a time, and beat until creamy.

    Beat in egg, flour, baking powder and 1 teaspoon of salt.

    Add alternately with milk and coconut juice.

    Beat until smooth.

    Add 1 teaspoon of vanilla. Bake in layers at 350° until cake tests done.
