- 1 large eggplant
- 1 Tbsp. salt
- 1 1/2 c. fine cracker crumbs
- 2 eggs, well beaten
- salad oil
Directions

1Peel eggplant; cut into finger size strips.

2Sprinkle with salt.

3Cover with water; soak 1 hour.

4Drain and pat dry with absorbent towels.

5Coat eggplant with cracker crumbs.

6Fry in hot oil until golden brown.
