French Herbed Chicken

Ingredients

  • 2 tablespoons shortening
  • 3 lbs chicken
  • 12 teaspoon salt
  • 14 teaspoon pepper
  • 12 cup chopped carrot
  • 1 clove of minced garlic
  • 2 tablespoons minced parsley
  • 34 teaspoon thyme
  • 1 cup sauterne white wine
  • 2 stalks of sliced celery
  • 1 (2 ounce) canof undrained sliced mushrooms
  • 1 medium bay leaf

Directions

    Melt the shortening in a large skillet.

    Sprinkle the chicken with salt and pepper; brown on both sides in the hot shortening.

    Remove chicken, and place it in a lightly greased shallow 2 quart casserole dish.

    Drain the excess shortening from the skillet and add the carrots, garlic, parsley and thyme.

    Cook over low heart till the carrot is tender.

    Add the carrot mix and remaining ingredients.

    Cover and bake at 350 degrees or until done to your preference.
