- 3 eggs
- milk or cream
- 3 Tbsp. milk
- 1 Tbsp. oil
- dash of salt and pepper
Directions

1Beat eggs until fluffy; beat in milk and seasonings.

2Pour into hot oil in a skillet over low heat.

3Cook slowly.

4As under surface becomes set, lift edges slightly with spatula to let uncooked portion flow underneath and cook.

5To add herbs, cheese or meat, sprinkle 1/2 tablespoon per egg while cooking.

6As soon as all mixture is set, fold over and serve immediately.

7When adding green peppers, onion or bacon, cook before adding to omelet.

8Serves 2.
