French Onion Soup

- 4 Tbsp. butter or margarine
- 4 to 5 c. thinly sliced onions
- 5 c. meat stock
- 1/8 tsp. salt
- 1/8 tsp. pepper
- 2 c. shredded Mozzarella or Swiss cheese (can mix)
- 1/4 c. Parmesan cheese
- 4 slices bread, toasted
Directions

1In large skillet, melt butter over medium heat.

2Add onions and saute until golden and tender, stirring frequently.

3Add salt and pepper, then meat stock; stir until mixture bubbles.

4Spoon into four crocks or small casserole dishes.

5Top with toasted bread. Sprinkle with Parmesan cheese and Mozzarella or Swiss cheese.

6Bake at 350° until cheese is melted (about 15 to 20 minutes).

7Use oxtail or neck bones for meat stock.
