French Onion Soup

  • 4 Tbsp. butter or margarine
  • 4 to 5 c. thinly sliced onions
  • 5 c. meat stock
  • 1/8 tsp. salt
  • 1/8 tsp. pepper
  • 2 c. shredded Mozzarella or Swiss cheese (can mix)
  • 1/4 c. Parmesan cheese
  • 4 slices bread, toasted

Directions

    In large skillet, melt butter over medium heat.

    Add onions and saute until golden and tender, stirring frequently.

    Add salt and pepper, then meat stock; stir until mixture bubbles.

    Spoon into four crocks or small casserole dishes.

    Top with toasted bread. Sprinkle with Parmesan cheese and Mozzarella or Swiss cheese.

    Bake at 350° until cheese is melted (about 15 to 20 minutes).

    Use oxtail or neck bones for meat stock.
