French Onion Soup

- 3 to 4 medium onions
- 3 Tbsp. butter
- 1 Tbsp. flour
- 3 c. vegetable/chicken stock
- dash of cloves, marjoram and ginger
- bay leaf
- 4 slices French bread
- grated cheese
Directions

1Finely chop onions.

2Melt butter in a thick saucepan.

3Add onions and brown slowly and well.

4Dust in flour and pour in stock.

5Simmer for 1/2 hour; add seasonings and bay leaf.

6Put French bread at the bottom of a casserole.

7Pour on the boiling soup.

8Dust thickly with the grated cheese, then set in 350° oven for 10 to 15 minutes to brown.

9Serve very hot.
