French Pork Chops

- 4 Tbsp. real butter
- 2 Tbsp. oil
- 3 scallions (green onions and tops), cut up
- 4 boneless pork chops
- 1/3 c. dry white wine
- 1/3 c. Dijon mustard
- 1/2 c. whipping cream (unwhipped)
Directions

1Place pork chops into the butter mixture and saute until brown.

2Remove the chops from butter and add the following to the butter: wine and mustard.

3Mix all the liquid together and boil about 2 minutes until syrupy, then add whipping cream.

4Boil 2 minutes.

5Pour over meat on each individual plate and serve with saffron rice with a few baby French peas on top.

6Garnish with a little chopped tomato placed on top of the meat.
