Ingredients

  • 3 c. sifted flour
  • 1 1/2 tsp. soda
  • 1/2 tsp. salt
  • 3 tsp. cinnamon
  • 1 1/2 c. salad oil
  • 2 c. sugar
  • 2 c. grated carrots
  • 1 c. crushed pineapple
  • 1 c. chopped pecans
  • 3 tsp. vanilla
  • 3 eggs

Directions

    Sift together flour, soda, salt and cinnamon.

    Mix together salad oil and sugar; add half of dry ingredients.

    Mix well and beat in carrots, pineapple and nuts; add vanilla and remaining dry ingredients.

    Add eggs, one at a time, beating until well blended after each addition.

    Pour into two greased 8 x 12 x 2-inch pans. Bake at 350° for 30 minutes or until brown and toothpick comes out clean.
