French Sesame Bread

- 6 plus c. flour
- 1 Tbsp. salt
- 2 pkg. yeast
- 2 1/2 c. very warm water
- 1 egg white
- 1 Tbsp. cold water
- 1 Tbsp. sesame seed
Directions

1Combine 2 1/2 cups flour, salt and undissolved yeast.

2Add warm water to dry ingredients and beat 2 minutes at medium speed, scraping bowl.

3Add 1 cup flour and beat 2 minutes at high speed. Stir in enough additional flour to make a soft dough.

4Knead 4 to 5 minutes until smooth and elastic.

5Place in greased bowl, turn to grease top.

6Cover and let rise until doubled (1 to 1 1/2 hours).

7Punch down dough; divide into 3 balls.

8Place on greased baking sheets which have been sprinkled with corn meal.

9Make several gashes on top of each loaf.

10Cover; let rise until doubled (about 1 hour).

11Bake at 450° for 20 minutes.
