- 3 c. flour
- 1/2 tsp. cinnamon
- 1 tsp. salt
- 2 c. sugar
- 2 tsp. vanilla
- 3 c. peeled, diced apples
- 1 c. chopped pecans
- 1 1/2 tsp. soda
- 1/2 tsp. nutmeg
- 2 large eggs
- 1 1/4 c. vegetable oil
Directions

1Sift together flour, soda, cinnamon, nutmeg and salt. Beat together the eggs, sugar, vegetable oil and vanilla. Add the two together and beat well. Stir in the apples and pecans with a wooden spoon.

2Pour into a greased and floured tube pan and bake 1 hour and 15 minutes at 350°.

3Frost with cream cheese frosting.
