  • 1 1/2 c. salad oil
  • 2 c. sugar
  • 2 large eggs
  • 1 tsp. soda
  • 2 tsp. baking powder
  • 1 tsp. vanilla
  • 2 1/2 c. flour, sifted with 1 tsp. salt
  • 1 c. chopped pecans
  • 3 c. chopped apples

    Combine first six ingredients.

    Sift flour and measure to equal 2 1/2 cups; sift again with salt.

    Add a small amount of the chopped pecans to flour and salt mixture.

    Combine with the batter mix; fold in the apples and remaining pecans.

    Bake in a prepared Bundt or angel food cake pan at 350° for 55 to 60 minutes.
