- 1 1/2 c. vegetable oil
- 2 c. sugar
- 4 eggs
- 2 1/2 c. plain flour
- 2 tsp. baking powder
- 1 tsp. cinnamon
- 1 tsp. salt
- 3 c. apples, chopped
- 1 c. pecans, chopped
- 1 tsp. vanilla
Directions

1Blend oil and sugar.

2Add eggs, one at a time, beating after each.

3Stir together dry ingredients and add to egg mixture.

4Stir in apples, pecans and vanilla.

5Pour into greased and floured 10-inch tube pan or Bundt pan.

6Bake at 350° for about 1 to 1 1/2 hours.

7Remove from pan when slightly cooled in tube pan at least 1 1/2 hours.
