  • 4 c. Winesap apples, diced
  • 3 c. sifted all-purpose flour
  • 3/4 c. vegetable oil
  • 2 eggs, well beaten with fork
  • 1 c. pecans
  • 1/2 tsp. cinnamon
  • 1/2 tsp. salt
  • 2 c. sugar
  • 2 tsp. baking soda
  • 1 tsp. vanilla

    Put apples, nuts and sugar together.

    Let stand 1 1/2 hours, stirring several times.

    Combine dry ingredients, then add apple mixture.

    Add oil, vanilla and eggs.

    Do not use mixer.

    Stir until well mixed.

    Pour into well-greased and floured pans (either 2 loaf pans or a small Bundt pan and a loaf pan).

    Bake at 350° for about 1 hour and 15 minutes (or until toothpick comes out clean).
