Name: Fresh Apple Cake
Ingredients: 2 c. sugar; 2 eggs; 1 c. oil; 2 1/2 c. flour; 1 tsp. vanilla; 2 tsp. baking powder; 1 tsp. soda; 1 tsp. cinnamon; 1 tsp. salt; 4 c. diced, raw apples; 1 c. chopped nuts (optional); 6 oz. butterscotch chips

2 c. sugar
2 eggs
1 c. oil
2 1/2 c. flour
1 tsp. vanilla
2 tsp. baking powder
1 tsp. soda
1 tsp. cinnamon
1 tsp. salt
4 c. diced, raw apples
1 c. chopped nuts (optional)
6 oz. butterscotch chips

Directions

Cream by hand the sugar, vanilla and eggs.

Add oil.

Mix together dry ingredients and add to creamed mixture.

Add nuts, then fold in 4 cups of diced raw apples (6 medium sized Winesaps are best).

Put in a well-greased and floured sheet cake pan. Sprinkle a 6 ounce package of butterscotch chips over top of batter.

Bake in a 350° oven for approximately 50 minutes.
