  • 2 c. sugar
  • 1 1/2 c. salad oil
  • 2 tsp. vanilla
  • 2 well beaten eggs
  • juice of 1/2 lemon
  • 1 tsp. salt
  • 3 c. sifted flour
  • 1 1/4 tsp. soda
  • 3 c. peeled and chopped apples
  • 1 1/2 to 2 c. chopped pecans

Directions

    Combine in a mixing bowl the sugar, oil, vanilla, eggs, lemon juice and salt; beat well.

    Mix flour and soda; add to the first mixture and beat well.

    Stir in the apples and nuts.

    Bake at 325° about 1 hour in a tube pan which has been buttered and floured.
