- 1/2 c. vegetable oil
- 1/2 c. sugar
- 2 eggs
- 1/2 tsp. vanilla
- 1 1/2 c. unbleached flour
- 1/2 c. whole wheat flour
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 1 1/2 c. peeled and chopped, tart, green apples
- 1/2 c. chopped pecans
Directions

1Preheat oven to 350°.

2In a large bowl, mix together oil, sugar, eggs and vanilla; beat with a whisk until creamy smooth. In a separate bowl, combine flours, baking powder and salt.

3Add to egg mixture, beating just until well blended.

4Fold in apples and nuts.

5Fill greased muffin tins about 3/4 full.

6Bake about 25 minutes or until inserted toothpick comes out clean.

7Turn out on wire rack and cool slightly before serving.
