  • 1 (11 oz.) pkg. black-eyed peas, cooked and drained
  • 1/2 (3 oz.) pkg. dried tomatoes, rehydrated and chopped
  • 1 c. diced zucchini or yellow summer squash
  • 1 c. French-cut green beans
  • 1/2 c. Niblets corn
  • 1/2 c. thinly sliced onion
  • 1/3 c. white wine vinegar
  • 1/3 c. olive oil
  • 1 Tbsp. fresh cilantro
  • 1 tsp. sugar
  • 3/4 tsp. cumin

Directions

    In large bowl, toss together black-eyed peas, tomatoes, zucchini, green beans, corn and onion.

    In a shaker jar, measure vinegar, oil, cilantro, sugar and cumin.

    Cover and shake well. Pour over salad and toss to combine.

    Cover and chill 2 to 24 hours.
