  • 1 1/2 c. cooking oil
  • 2 c. sugar
  • 3 eggs
  • 3 c. cake flour, sifted
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. butter flavoring
  • 2 tsp. almond extract
  • 3 large apples, peeled and cut in small pieces
  • 1 c. pecans, chopped

    Combine oil and sugar.

    Add eggs and beat for 3 minutes at medium speed.

    Sift together flour, salt and soda.

    Add to oil mixture a little at a time.

    Add flavorings and fold in apples and pecans.

    Bake in prepared tube pan for 1 hour and 20 minutes (or until done) at 325°.
