  • 1 1/4 c. cooking oil
  • 2 c. sugar
  • 3 eggs
  • 2 tsp. vanilla
  • 3 c. all-purpose flour
  • 1 tsp. baking soda
  • 3/4 tsp. cinnamon
  • 1 c. pecans, chopped
  • 3 medium apples, peeled and chopped
  • 1/4 c. or so water (if dough gets too thick for mixer)

Directions

    Combine oil, sugar and eggs; beat at medium speed for 3 minutes.

    Combine dry ingredients and add to mixture.

    Fold in pecans and apples.

    Bake in greased and floured tube pan at 325° for 1 hour and 20 minutes, or until cake is done.
