- 2 Tbsp. lemon juice
- 1 envelope unflavored gelatin
- 1 pt. fresh or frozen blueberries
- 2 Tbsp. water
- 1 1/2 tsp. arrowroot or 2 tsp. cornstarch
- 3/4 c. sugar substitute
Directions

1Combine the lemon juice, water, gelatin and arrowroot in a saucepan.

2Heat until dissolved, then add the blueberries.

3Cook, stirring, until thickened, then boil for 2 to 3 minutes.

4Remove from heat and stir in sweetener.
