  • 1 large coconut, drained, cracked, meat peeled off and grated
  • 2 1/4 c. flour
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 1/2 c. shortening
  • 1 1/2 c. sugar
  • 3 egg yolks (reserve whites for frosting)
  • 1 c. + 3 Tbsp. milk (part coconut milk)
  • 1 tsp. vanilla

Directions

    Sift flour, salt and baking powder.

    Cream shortening and sugar.

    Add egg yolks, milk and vanilla.

    Add all dry ingredients to the creamed mixture alternately with milk.

    Grease 9-inch cake pans.

    Bake at 350° until done.
