Fresh Coconut Pie

  • 2 Tbsp. soft butter or margarine
  • 1 1/2 c. shredded fresh coconut
  • 3 eggs
  • 3/4 c. sugar
  • 1 Tbsp. lemon or lime juice
  • 12 oz. pkg. cream cheese
  • 1 c. fresh coconut

Directions

    Spread butter (softened) in bottom of pie plate. Sprinkle 1 1/2 cups coconut. Press in firmly and chill until firm.

    Put eggs, sugar, juice, cheese and 1 cup coconut in blender. Blend well and pour into prepared pie plate. Bake at 350° for 25 to 30 minutes.
