  • 2 c. corn, cut fresh from cob
  • 1 c. chopped tomatoes
  • 1 c. chopped onions
  • 3/4 c. green pepper
  • 2 tsp. salt
  • 1/8 tsp. cayenne pepper
  • 1/2 tsp. baking powder
  • 1 c. white or yellow cornmeal
  • 1 c. grated Cheddar cheese
  • 2 eggs, beaten
  • 1/2 c. evaporated milk
  • 1/2 c. water

    Add all other ingredients to this mixture and bake in a greased casserole at 375° for about 1 hour.
