Ingredients
- 1 1/2 c. all-purpose flour
- 2 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 3 Tbsp. sugar
- 2/3 c. cornmeal
- 2 eggs, slightly beaten
- 1 c. buttermilk or plain yogurt
- 2 Tbsp. margarine, melted
- 1 c. cooked whole kernel corn (about 1 large ear)
Directions

1Preheat oven to 375° and lightly grease 12 muffin cups.

2Sift together dry ingredients; mix in cornmeal.

3In a separate bowl, combine beaten egg with buttermilk, margarine and corn.

4Mix these ingredients with dry ingredients just until blended.

5Do not overmix.

6Spoon into muffin pans.

7Bake for 20 to 25 minutes, until done.
