Fresh Greek Quinoa And Avocado Salad

- 1/2 cup quinoa
- 1 cup chicken broth low sodium
- 2 roma tomato large, seeded and finely chopped
- 1/2 cup spinach shredded
- 1 cup red onion finely chopped
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1 avocado large, chopped
- 1 cup fat free feta cheese
Directions

1Bring quinoa to a boil with chicken broth. Cover and simmer for 15 minutes until liquid is absorbed. Allow to cool for 5 minutes.

2In a medium bowl combine quinoa, tomatoes, spinach and onion. Add cooled quinoa.

3Whisk lemon juice, olive oil and salt in a small bowl.

4Add avocado to the bowl with dressing and toss with feta.
