Ingredients

  • 2 Tbsp. olive oil or cooking oil
  • 1 large onion, sliced or chopped
  • 5 or 6 cloves chopped garlic
  • 1 green bell pepper, cubed
  • 1 red bell pepper, cubed
  • 1 yellow bell pepper, cubed
  • 8 diced plum tomatoes
  • 2 or 3 jalapeno peppers, diced

Directions

    In a large frypan or Dutch oven sweat onion and garlic in 2 tablespoons of oil.

    Cook until onion is translucent.

    Add peppers, tomatoes and jalapeno peppers.

    Cover and cook for 5 minutes. Serve hot with chips.
