- 2 Tbsp. olive oil or cooking oil
- 1 large onion, sliced or chopped
- 5 or 6 cloves chopped garlic
- 1 green bell pepper, cubed
- 1 red bell pepper, cubed
- 1 yellow bell pepper, cubed
- 8 diced plum tomatoes
- 2 or 3 jalapeno peppers, diced
Directions

1In a large frypan or Dutch oven sweat onion and garlic in 2 tablespoons of oil.

2Cook until onion is translucent.

3Add peppers, tomatoes and jalapeno peppers.

4Cover and cook for 5 minutes. Serve hot with chips.
