- 1 avocado large, ripe, mashed
- 1/2 juice a large lemon
- 1 mango large, ripe, peeled& diced
- 1/4 cup red onion finely chopped
- 3 tablespoons cilantro leaves fresh, torn into small pieces
- 1/2 teaspoon salt more to taste
- 1/2 teaspoon ground black pepper more to taste
- 14 1/2 ounces diced tomatoes unseasoned, use half the can
- 1/4 teaspoon seasoning Chipotle Chile Pepper, more to taste- You can
Directions

1Add the avocado to a large mixing bowl and mash with a fork.

2Squeeze the juice from half a large lemon over the avocado.

3Add the diced mango and onion to the bowl.

4Add half the can of diced tomatoes including the juice. Add the salt, pepper and Chipotle Chile Pepper seasoning.

5Add the torn cilantro leaves and mix all the ingredients together. Add more seasoning and lemon juice to your taste.
