  • 1 avocado large, ripe, mashed
  • 1/2 juice a large lemon
  • 1 mango large, ripe, peeled& diced
  • 1/4 cup red onion finely chopped
  • 3 tablespoons cilantro leaves fresh, torn into small pieces
  • 1/2 teaspoon salt more to taste
  • 1/2 teaspoon ground black pepper more to taste
  • 14 1/2 ounces diced tomatoes unseasoned, use half the can
  • 1/4 teaspoon seasoning Chipotle Chile Pepper, more to taste- You can

Directions

    Add the avocado to a large mixing bowl and mash with a fork.

    Squeeze the juice from half a large lemon over the avocado.

    Add the diced mango and onion to the bowl.

    Add half the can of diced tomatoes including the juice. Add the salt, pepper and Chipotle Chile Pepper seasoning.

    Add the torn cilantro leaves and mix all the ingredients together. Add more seasoning and lemon juice to your taste.
