- 2 c. sugar
- 2 Tbsp. vanilla
- 1 tsp. salt
- 3 c. flour (all-purpose)*
- 2 eggs, well beaten
- 1 c. oil
- juice of 1/2 lemon
- 1 1/4 tsp. soda
- 3 c. fresh pears, sliced thin (about 4 pears)
- 1 1/2 c. pecans (optional)
Directions

1Mix sugar, oil, vanilla, eggs, salt and lemon juice.

2Beat well.

3Sift flour and soda, gradually adding to first mixture.

4Add pears and pecans; blend.

5Bake in greased and floured Bundt pan for 1 1/2 hours at 325° or 12 muffins and 1 loaf pan (2 mini loaf pans).
