  • 2 c. sugar
  • 2 Tbsp. vanilla
  • 1 tsp. salt
  • 3 c. flour (all-purpose)*
  • 2 eggs, well beaten
  • 1 c. oil
  • juice of 1/2 lemon
  • 1 1/4 tsp. soda
  • 3 c. fresh pears, sliced thin (about 4 pears)
  • 1 1/2 c. pecans (optional)

Directions

    Mix sugar, oil, vanilla, eggs, salt and lemon juice.

    Beat well.

    Sift flour and soda, gradually adding to first mixture.

    Add pears and pecans; blend.

    Bake in greased and floured Bundt pan for 1 1/2 hours at 325° or 12 muffins and 1 loaf pan (2 mini loaf pans).
