  • canola oil
  • 1 pound paneer, cut into 3/4-inch cubes
  • salt
  • 2 medium onions, finely chopped
  • 1-inch piece of ginger, peeled, then grated or finely chopped
  • 5 cloves of garlic, crushed
  • 1 fresh green chili, very finely chopped
  • 14 ounces cherry tomatoes, halved
  • 1 tablespoon tomato paste
  • 1 1/2 teaspoons ground coriander
  • 1 1/2 teaspoons ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon chili powder
  • 1 pound fresh spinach leaves, washed

    Put 3 tablespoons of the oil into a lidded frying pan on a high heat.

    Lightly season the paneer cubes with salt and fry them in the pan, turning regularly until golden on each side.

    Watch out, as the paneer might spit; if it does, half cover it with a lid.

    Remove the paneer cubes using a slotted spoon and put them to one side on a paper towel.
