- 3 c. zucchini or yellow squash, sliced
- 1/4 c. onion, chopped
- 4 Tbsp. margarine
- 2 eggs, beaten
- 1/4 c. milk
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 c. sharp cheese, grated
- 1 c. Ritz crackers, crushed
Directions

1Preheat oven to 350°. Saute squash and onions with the margarine until tender. Drain. Add eggs, milk, salt and pepper. Spoon into a 9 x 13-inch casserole dish and top with cheese and crackers. Bake for 20 minutes.
