  • 3 c. zucchini or yellow squash, sliced
  • 1/4 c. onion, chopped
  • 4 Tbsp. margarine
  • 2 eggs, beaten
  • 1/4 c. milk
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 c. sharp cheese, grated
  • 1 c. Ritz crackers, crushed

Directions

    Preheat oven to 350°. Saute squash and onions with the margarine until tender. Drain. Add eggs, milk, salt and pepper. Spoon into a 9 x 13-inch casserole dish and top with cheese and crackers. Bake for 20 minutes.
