- 1 1/2 qt. tart, firm apple sections (8 medium apples)
- 5 to 6 Tbsp. butter
- 1 Tbsp. lemon juice
- 2 Tbsp. granulated sugar
- 2 Tbsp. light brown sugar
- pinch of salt
Directions

1Peel the apples; cut into eighths and remove core.

2Heat 5 tablespoons butter in a heavy skillet.

3Add apples and saut; stir gently over medium heat, about 15 minutes, until just starting to be tender to the fork.

4Add more butter only if needed.

5Sprinkle the lemon juice over apples and then add the sugar.

6Stir once and cover with heavy lid; turn off the heat and let stand covered for 15 minutes.

7Apples should maintain shape and some texture.

8Serve with pork chops or chicken.

9Yields 6 servings.
