- 12 artichoke hearts
- 2 eggs
- 6 Tbsp. olive oil
- 1 c. bread crumbs
- 1 Tbsp. chopped parsley
- salt and pepper to taste
Directions

1Sprinkle artichoke hearts with salt and pepper.

2Mix parsley with bread crumbs.

3Beat eggs slightly.

4Dip hearts in egg; roll in bread crumbs.

5Fry in hot oil about 3 minutes on each side or until golden brown.

6Serve very hot.
