Fried Bean Patties

Ingredients

  • any kind leftover beans (black eyed peas are my favorite)
  • 1 egg
  • 1 medium chopped onion
  • 1/2 c. self-rising flour

Directions

    Mash up drained beans or peas. Add other ingredients (add more flour if needed). Spoon into hot shortening with big rounded over tablespoon of mixture. Fry until golden brown on both sides. Delicious!
