Fried Brown Rice

Ingredients

  • 2 teaspoons vegetable oil
  • 2 eggs lightly beaten
  • 2 slices bacon finely chopped
  • 2 1/2 ounces frozen peas
  • 3 ounces frozen sweet corn
  • 8 3/4 ounces cooked brown rice
  • 2 spring onions finely chopped
  • 2 teaspoons soy sauce
  • 1 tablespoon sweet chili sauce

Directions

    Heat 1 tsp oil in a large wok or frying pan. Add eggs, swirl to form a thin omelette and cook until set. Cut into strips.

    Heat remaining oil and cook bacon until browned and crisp. Add peas and sweet corn and stir-fry until hot. Add rice, onions and soy sauce and stir-fry until hot.

    Serve fried rice topped with omelette and chili sauce.
