Fried Buffalo Mozzarella

- 4 buffalo mozzarella small, cut each into 3 slices
- 1 cup all-purpose flour seasoned + 2 tbsp
- 4 eggs beaten
- 1 3/4 cups breadcrumbs
- 4 tablespoons oil for deep-frying

- 7 ounces radicchio leaves separated
- 2 heads endive leaves separated
- 1 red onion thinly sliced
- 1 lemon zested and juiced
- 1/2 tablespoon honey
- 1 tablespoon olive oil
- lemon wedges to serve
Directions

1Dust mozzarella in flour, shaking off excess. Dip in beaten eggs then roll in breadcrumbs to coat. Chill for 10 mins.

2Heat oil over high heat. Working in batches, fry mozzarella for 2-3 mins, until golden. Drain on paper towels.

3For salad, combine radicchio, endive and onion. Whisk together lemon zest, lemon juice, honey and olive oil. Season then toss with salad.

4Top salad with fried mozzarella and serve with lemon wedges.
