- 2 lb. catfish
- 2 tsp. salt
- 1/4 tsp. pepper
- 2 eggs, beaten
- 3 tsp. milk
- 1 1/2 c. cornmeal
- vegetable oil or shortening
Directions

1Season fish with salt and pepper.

2Combine eggs and milk.

3Dip fish into egg mixture, then roll in cornmeal to coat.

4Pour oil into frying pan, filling to the halfway point; heat to 375°.

5Fry fillets for 8 minutes or until first side is golden brown, then turn and cook 8 more minutes until fish flakes easily with fork. Drain fillets on paper towels and serve.
