- 12 small to medium catfish
- pepper to taste
- 1 c. cornmeal
- 1 tsp. salt
- 1 egg, beaten
- 1 c. buttermilk, milk or water
- vegetable oil
Directions

1Fillet any catfish that are very large; wash and pat dry. Pepper lightly.

2Mix cornmeal and salt; combine egg and milk.

3Dip fish in egg mixture and then in cornmeal.

4Heat 1/2-inch oil in a heavy skillet to 370°.

5Fry fish about 5 minutes on each side until golden brown.

6Drain on paper towels and serve immediately. Serves 6.
