  • 12 small to medium catfish
  • pepper to taste
  • 1 c. cornmeal
  • 1 tsp. salt
  • 1 egg, beaten
  • 1 c. buttermilk, milk or water
  • vegetable oil

    Fillet any catfish that are very large; wash and pat dry. Pepper lightly.

    Mix cornmeal and salt; combine egg and milk.

    Dip fish in egg mixture and then in cornmeal.

    Heat 1/2-inch oil in a heavy skillet to 370°.

    Fry fish about 5 minutes on each side until golden brown.

    Drain on paper towels and serve immediately. Serves 6.
