Ingredients
- 1 lb. skinned and boned chicken breast meat
- 1 egg white
- 1 Tbsp. cornstarch
- 2 slices fresh ginger, minced
- 6 Tbsp. cooking oil
- 2 c. walnuts, toasted
- 1 Tbsp. dry white wine
- 3 Tbsp. soy sauce
- 1 tsp. cornstarch, mixed with 1 Tbsp. water
Directions

1Toast walnuts at 300° for 10 to 15 minutes.

2Cut chicken in 1/2-inch cubes and mix with egg white and 1 tablespoon cornstarch and ginger.

3Stir-fry in hot oil in wok or skillet for 3 minutes until chicken changes color.

4Add wine and soy sauce.

5Cook 2 or 3 minutes, then add cornstarch and water mixture and walnuts.

6Mix well and stir to heat through.

7Serve over steamed rice.
