Fried Corn Patties

Ingredients
- 1/2 c. water
- 2 eggs
- 2/3 c. all-purpose flour
- 1/2 c. chopped green onions
- 1/2 c. chopped celery
- 1 clove garlic, minced
- 1 tsp. coriander
- 1/4 tsp. cumin
- 2 c. kernel corn, drained
- dash of red pepper
- salt and pepper to taste
- oil for frying
Directions

1In blender or food processor, combine corn and water.

2Do not puree.

3Add eggs and process briefly.

4Put this mixture in bowl. Add all remaining ingredients, except oil (it is for frying), mixing well.

5Heat oil, about 1/2 to 1-inch deep in skillet.

6Drop 1 to 2 tablespoons of mixture into heated oil.

7Fry to 2 to 3 minutes on each side or until golden brown. Drain on paper towels.
