Ingredients
- 6 chicken breast halves, skinned
- 1 1/2 c. water
- 1 (15 oz.) can unsweetened pineapple chunks (undrained)
- 1 medium apple (unpeeled)
- 1 c. seedless grapes, halved
- 1 1/2 c. mayonnaise (reduced calorie)
- lettuce leaves
Directions

1Place chicken and water in oven; cover and cook 15 to 20 minutes or until tender.

2Drain and remove chicken from bone. Coarsely chop and set aside.

3Drain pineapple and reserve juice. Coarsely chop apple.

4Dip in pineapple juice to prevent discoloring.

5Combine chicken, pineapple, apple, grapes and mayonnaise; mix well.

6Cover and chill 2 hours.

7Serve on lettuce leaves.
