- 2 - 3 leaves romaine lettuce, chopped
- 1/4 cup chopped tomato
- 1/4 cup diced avocado (optional)
- 1 - 2 slices whole grain toast
- 1 teaspoon extra virgin olive oil
- butter for the toast
- salt & pepper
Directions

11) Place the lettuce and optional salad ingredients on a plate or pasta bowl.

22) Toast & butter the bread then cut into bite sized pieces and garnish around the salad.

4Note: You can use any salad ingredients that you like. I prefer to keep this dish simple and enjoy the clean, natural flavors. You don't need a salad dressing as the olive oil, salt & pepper and the egg will more than make up for it.
