- 1 medium sized eggplant
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 c. all-purpose flour
- oil (enough to make 1 inch deep in skillet)
Directions

1Peel and slice eggplant.

2Mix flour, salt and pepper.

3Cover eggplant with flour mixture.

4Drop into hot skillet of oil and fry until brown on one side.

5Turn and fry until crisp; remove from oil and drain.

6Garnish with sliced red ripe tomatoes.
