1Remove skin; wash and cut off fat.

2Soak an hour in salt and vinegar water (about 2 tablespoons of vinegar).

3Beat eggs lightly.

4Salt and pepper legs.

5Dip in flour, then in eggs.

6Dip again in flour.

7Fry in deep oil until done on medium-high heat. Turn down and simmer for 15 to 20 minutes.
