  • 3 slices bacon, cut in half
  • 1/4 c. diced onion
  • 1 c. cooked rice
  • 2 Tbsp. soy sauce
  • 1/4 c. water
  • 2 slightly beaten eggs

    Fry bacon until crisp.

    Drain and crumble.

    Stir-fry onion in bacon drippings for 2 minutes.

    Add rice and stir-fry for 7 to 8 minutes.

    Add soy sauce, water and crumbled bacon.

    Reduce heat to medium-low.

    Pur eggs on top of rice mixture.

    Stir-fry 3 to 4 minutes or until eggs are cooked.
