Ingredients
- 4 c. cooked and drained rice
- 4 Tbsp. oil
- 1 1/2 c. meat, chicken, pork or turkey
- 3/4 c. chopped scallions
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. soy sauce
- 2 eggs, beaten
- 1/2 c. firmly chopped parsley
Directions

1Cook rice the day before and refrigerate overnight.

2Heat oil in deep skillet or wok.

3Cook rice in it, stirring steadily and pressing out lumps, until lightly browned.

4Add meat, onions, salt and pepper.

5Cook 1 minute, stirring constantly.

6Make a hollow in the center and pour eggs into it.

7Stir until they begin to set. Mix into rice mixture.

8Blend in parsley and soy sauce.
