- 1 c. cooked rice, cooked per pkg. instructions
- 2 c. chicken broth or water
- 1 small carrot, diced
- 1/2 small onion, diced
- 1 Tbsp. butter or peanut oil
- 1 Tbsp. soy sauce (optional)
- 1 egg
Directions

1Heat broth to boiling.

2Add rice and turn down heat; cover for 20 minutes, stirring occasionally.

3In a small, nonstick pan or wok on medium heat, put butter or oil, carrots and onion and cook until onion is translucent.

4Take out onion and carrot.

5Scramble 1 egg; add onion and carrot back to egg and add cooked rice.

6Cook over medium heat about 3 to 5 minutes.

7Add soy sauce, if desired. Serve hot.
