Ingredients
- 1/2 c. cooked chicken (or ham, pork, turkey, seafood, rattlesnake or wieners), cut into very small pieces
- 2 Tbsp. butter
- 2 green onions, finely chopped (optional)
- 2 eggs, beaten
- 1/2 c. fresh or cooked peas or leftover vegetables (optional)
- 2 c. cooked rice
- 1/4 c. soy sauce
Directions

1Melt butter in frying pan or wok.

2Add beaten eggs and stir to keep cooked egg pieces small.

3Stir rice and meat, mixing thoroughly.

4Add soy sauce and stir until color of rice is fairly uniform.

5Add vegetables and continue to cook until heated.

6Meat and vegetables are optional.

7You may add several kinds or leave out all together.

8Serves 4.
